Shrimp Roll






Shrimp Roll

          For seafood lovers and especially the shrimp lover here is  a simple recipe that you surely love.

Ingredients :

 8pcs  large shrimp 
1pc small carrots chopped
1/4cup pineapple crushed
salt and pepper to taste
1pc. onion chopped
1/2tsp. soy sauce
4pcs lumpia wrapper cut into 2
oil for frying


Procedure:

  •   Peel shrimps and cut off heads but reserve the tails. Chop shrimp meat and combine with the rest of the ingredients. Season with 1/3 tsp iodized fine salt (or 1 tsp iodized rock salt), 1/4 tsp pepper and 1 tsp soy sauce. Mix well.
  • Wrap every 1 tbsp of mixture in lumpia wrapper. Insert shrimp tail at the end of each roll. Fry in oil until golden brown.

Special Ginataang Tilapia

 Ginataang Tilapia

           Ginataang Tilapia is one of the dishes that all Filipino are craving for.  It is cooked in coconut milk and it is served with pepper that is used for sinigang . It is popularized by the Bicolanos, the fifth-largest Filipino group that lives in the southern islands of Luzon.
Try this simple recipe . 


Ingredients:

3 pcs  medium size Tilapia cleaned
1pc siling haba
1 onion finely sliced
2 cloves garlic crushed
1 bulb ginger cut in strips
3/ 4 cup coconut cream ( 1st extraction)
7pcs large petchay leaves
salt and pepper to taste
3tbsp. vinegar
1 tbsp. fish sauce
oil

Procedures:
  1. Saute onion , garlic, ginger in hot oil
  2. Pour in the coconut cream and stir until natural oil from the coconut cream comes out add fish sauce ,vinegar and salt .
  3. Lower the heat and put the tilapia , siling haba and simmer for nine minutes or until cooked
  4. Add the petchay on top  and simmer for about a minute.

Avocado and crab

Avocado Crab Ensemble

     Avocado is everywhere in the market today, so I decided to have another recipe for you which I know that you will like it to try in your home. As I think on what will be the best recipe for avocado I tried to browse to the internet to find a new recipe that we should try.

Ingredients:

100g  lettuce, shredded
2 tbsp chopped wansoy (or coriander leaves)
1 large avocado, peeled and sliced thinly
4 pcs crab sticks, shredded
1/2 cup chopped almonds, toasted
Dressing:
1 160g can all purpose cream (nestle cream)
2 tbsp lemon juice
1 tbsp chopped onions
1/4 cup fresh milk (nestle fresh milk)
1/2 tsp sesame oil

 Procedure:

1. Toss  lettuce with chopped wansoy in a salad bowl until very well-blended. Arrange on a platter.
2. Arrange avocado slices and shredded crab stick on top of lettuce and sprinkle with almonds. Set aside.
3. For the dressing, combine cream, lemon juice, onions, milk, and sesame oil in a bowl. Serve with prepared  salad.

Breaded Chicken Fillet

Chicken is probably the most  eaten and most loved non-vegetarian food products. Because  it contain a low calorie and high in protein . All of us enjoy eating chicken even if it fried and coat it with bread crumbs or flour. Here a simple recipe that all of us really enjoy.

Ingredients:

5pcs chicken breast  fillet
1/4 cup fresh milk
1pc egg
 salt and pepper to taste
4tbsp all- purpose flour
1/2 cup breadcrumbs
oil for frying

Procedures:

1. Flatten chicken breast fillets until the meat is of even thickness, about 1/2 inch. Cut meat into uniform serving portions. marinate the chicken breast in 1/2cup fresh milk for 20 minutes.

2. Beat eggs with salt and 2 tbsp water. Dust each chicken piece with flour then dip in the egg mixture. Roll in breadcrumbs to coat. Fry in hot oil until golden brown.

Pinoy Longganisa


Longganisa Recipe

 Longganisa is one of the favorite  foods of Filipino. This  recipe is rich in Niacin  that promotes normal digestion and healthy skin. Try this simple recipe.

Ingredients:

1 kl lean ground pork
1 head  crushed garlic
2 onions chopped
2 tbsp salt
2 tbsp soy sauce
2tbsp black pepper
1/2 cup  sugar
4 tbsp vinegar
115g tomato sauce
plastic wrapper or wax paper


Procedures:

  • Mix all ingredients well. Refrigerate for at least 2 hrs. it is better to rest it over night 
  • Place every 2 tbsp of mixture of wax paper or clean plastic wrapper
  • Roll to form longganisa shape.
  • Remove paper or plastic and fry desired number of longganisa pieces in hot oil until brown. 
  • Store the rest in freezer. Will last for about 1 month in freezer.

       Longganisa or the native sausage is one of the very popular Filipino foods. Different regions in the Philippines are known for their own version of longganisa, which originated from Spain centuries ago. As a former Spanish colony for 300 years, our country adopted Spanish cuisine and longganisa is one prepared food that's kept its popularity over the centuries.  The best go with it is fried egg and fried rice with hot coffee or chocolate.  This is one of the favorite of my sister longganisa every time she visited here in the province of Mindoro. She never missed to buy and have a breakfast meal with it on the table. She said that the longgainsa here are more appetizing, and there were also very unfamiliar taste that she only found in our local longganisa.

Nutritious Potato

Croqueta de Patatas
Crunchy on the outside, moist and tender on the inside fried potatoes that make wonderful meal starters

Ingredients:
½ kg potatoes, boiled, peeled and mashed well
3 tbsp butter or margarine, melted
1tbsp. seasoning
salt and pepper to taste
¼ cup  Fresh Milk, or enough to make a paste
2 tbsp cooking oil
1 tbsp minced garlic
2 tbsp minced onion
¼ kg ground beef
¼ cup water
1 11g  Broth Cube
¼ cup minced spring onion
2 tbsp all purpose flour
bread crumbs, as needed
2 eggs slightly beaten
cooking oil for frying

Procedure:
  1. Combine mashed potato, butter, and seasoning. Season with salt and pepper to taste. Pour in  Fresh Milk until a paste consistency is achieved. Set aside.
  2. Heat cooking oil, sauté garlic and onion until limp. Stir in ground beef and cook until the beef turns brown in color. Pour in water, add  Broth Cube and spring onion. Continue cooking until mixture is almost dry. Let cool.
  3. Add flour to the mashed potato to achieve molding consistency. Scoop about 2 tbsp of the prepared mashed potato and fill it up with ground beef mixture. Shape into a ball or into small logs. Dip in beaten eggs then roll in breadcrumbs.
  4. Heat cooking oil. Fry the cocreta one by one until golden brown. Transfer onto a plate lined with paper towels to drain excess oil. Serve with the prepared sauce on the side.
